    Caramel-Pecan Cheesecake Pie Recipe


    TOTAL TIME: Prep: 15 min. Bake: 35 min. + chilling YIELD:6-8 servings
    Ingredients
    • 1 sheet refrigerated pie pastry
    • 1 package (8 ounces) cream cheese, softened
    • 1/2 cup sugar
    • 4 eggs
    • 1 teaspoon vanilla extract
    • 1-1/4 cups chopped pecans
    • 1 jar (12-1/4 ounces) fat-free caramel ice cream topping
    • Additional fat-free caramel ice cream topping, optional
    Directions
    • 1. Preheat oven to 375°. Line a 9-in. deep-dish pie plate with pastry. Trim and flute edges. In a small bowl, beat cream cheese, sugar, 1 egg and vanilla until smooth. Spread into pastry shell; sprinkle with pecans.
    • 2. In a small bowl, whisk remaining eggs; gradually whisk in caramel topping until blended. Pour slowly over pecans.
    • 3. Bake 35-40 minutes or until lightly browned (loosely cover edges with foil after 20 minutes if pie browns too quickly). Cool on a wire rack 1 hour. Refrigerate 4 hours or overnight before slicing. If desired, garnish with additional caramel ice cream topping. Yield: 6-8 servings.

    Bourbon Chocolate Pecan Pie Recipe

    TOTAL TIME: Prep: 25 min. + chilling Bake: 55 min. + cooling YIELD:8 servings
    Ingredients
    • 1 cup all-purpose flour
    • 1 tablespoon sugar
    • 1/2 teaspoon salt
    • 6 tablespoons cold butter
    • 2 to 3 tablespoons cold water
    • FILLING:
    • 3 eggs
    • 1 cup packed dark brown sugar
    • 1/2 cup light corn syrup
    • 1/2 cup dark corn syrup
    • 1/4 cup bourbon
    • 2 tablespoons butter, melted
    • 1/2 teaspoon salt
    • 1-1/2 cups pecan halves, divided
    • 3/4 cup 60% cacao bittersweet chocolate baking chips, divided
    Directions
    • 1. In a small bowl, combine the flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Add water; toss with a fork until mixture forms a ball. Flatten into a disk. Wrap dough in plastic wrap and refrigerate for 30 minutes or until easy to handle.
    • 2. On a floured surface, roll out dough to fit a 9-in. deep-dish pie plate. Transfer pastry to pie plate; trim to 1/2 in. beyond edge of plate and flute edges.
    • 3. In a large bowl, beat the eggs, brown sugar, corn syrups, bourbon, butter and salt until blended. Stir in 1 cup pecans and 1/2 cup chocolate chips. Pour filling into crust; sprinkle with remaining pecans and chocolate chips. Bake at 325° for 50-60 minutes or until crust is golden brown and filling is puffed. Cool completely on a wire rack. Yield: 8 servings.

    Ambrosia Pecan Pie Recipe
    TOTAL TIME: Prep: 10 min. Bake: 50 min. + cooling YIELD:8 servings
    Ingredients
    • 3 eggs
    • 3/4 cup light corn syrup
    • 1/2 cup sugar
    • 3 tablespoons brown sugar
    • 3 tablespoons orange juice
    • 2 tablespoons butter, melted
    • 1 teaspoon grated orange peel
    • 1/8 teaspoon salt
    • 1-1/2 cups chopped pecans
    • 2/3 cup flaked coconut
    • 1 unbaked pastry shell (9 inches)
    Directions
    • 1. In a large bowl, beat the eggs, corn syrup, sugars, orange juice, butter, orange peel and salt until well blended. Stir in pecans and coconut.
    • 2. Pour into pastry shell. Bake at 350° for 50-60 minutes or until a knife inserted near the center comes out clean. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack. Yield: 8 servings.

    LOL yeah over 500 calories per serving, and it says serves 6-8 so if you cut it for 6 servings, the numbers are considerably worse.

    I think I will make them all for Xmas heh

    I make pecan pies at Thanksgiving and Christmas. Next week I want to try the 1st recipe, the caramel pecan pie, double yum!
    I still have 1/2 bushel to shell.

    I absolutely love butter pecan ice cream. I was thinking the 1st recipe as well, but I was going to add a couple tablespoons of butter buds (flavor substitute), and use brown sugar with the cream cheese, plus say 1/4 or 1/3 cup fine chopped pecans. The cheesecake layer is fine I suppose, but I wanted to turn it into sort of a praline cheesecake layer. The rest of the recipe and instructions I would follow closely.
