This is the solution: Ingredients: 1 7-ounce bag un-sweeted shredded coconut (about 2 2/3 cups) 1 Cup slivered raw almonds 1/4 cup raw unfiltered (local if possible) honey 4 large egg whites (save the yolks for adding to your scrambled eggs in the morning or make custard with them) Method: Preheat the oven to 325 degrees. Place parchment paper on 2 large cookie sheets. In large bowl put coconut, almonds, and honey. Mix until well incorporated. Stir in egg whites and stir until well blended. Drop mixture on parchment by heaping tablespoon measurement, 2 inches apart. Bake cookies for 25 minutes until golden. With pancake turner remove cookies to wire racks to cool completely. Store in tightly covered container. Yields about 1 1/2 dozen
I've made these a few times but used the dehydrator - will dig out the recipe Mine has some palm (coconut) sugar in them too
Great minds, think alike.... V, I was thinking the same thing..... When I was a kid, Betty C. Had Macaroon Mix, and I would add Cocoa, and made Chocolate Macaroons....
