Turkeys going in...... 8.5 kg barley fits in my oven... I need a bigger kitchen! Herb butter (garlic, rosemary, sage, sea salt, pepper) under skin, sage, rosemary, bulb of garlic, small orange & handful of cranberry's inside.... Bacon & a touch of Maple syrup on top...
Starter, Rose marie Prawn salad Christmas Meal.... Turkey (dark meat cause thats what I like ) Pork stuffing balls (1 each cranberry/orange and Sage/onion) Honey roasted carrots & parsnips. Candied sweet potato Roasted Garlic & Rosemay potatoes (in goose fat of course) Brussel spouts with bacon, maple syrup & pine nuts Bacon wrapped chippolatas (wee pork sausages) Skirlie (Scottish Oatmeal stuffing) Green bean cassirol (homemade mushroom cream sauce.. Not tinned mushroom soup) Not shown on plate Gravy & Cranberry sauce

ouh yum, baconator turky and pate... and carrot cake... i just died looking at all that good home made food!
Skirlies pretty easy to make but you do need grated suet to do it properly.. It doesn't really taste right other-wards. vegetarian suet is just, Nooo... Suet, fine diced onion, oatmeal (run through the food processer to chop fine-ish) Salt & Pepper. Sweat off onions in copius amounts of suet.. add oatmeal & fry till light golden. salt & pepper. There needs to be enough suet to moisten the oatmeal. Thats it Ill add you to the list LOL Honestly. The Pate was freaking awsome. This is the first time I got the turky liver in with the giblets.. usally its just the neck/gizards & heart. I must now find a source for turkey livers. (plus.. 1 liver made that entire dish.... )
@runswithdogs I was looking at this thread and I hope this year you will share what you create during the Christmas season. The goodies you made looked so delicious. I keep wondering what you will make this year.
