My Grandma used to make Bourbon Balls at Christmas time years ago . That was before my likker days , I was still just a beer guy . But they were a big hit my uncles and Grandpa . They all used to say how they'd get drunk on them ,, but I believe it was just because they were washing them down with the left over likker ..

So heads up. Im working with a new cooker that has gas ovens... no more convection oven like I'm used to so things might get a little tweaky as im trying to get used to it. Carrot cake starts with soaking dried morrelo cherries, barberries, lemon powder and dried orange peel in kraken spiced rum overnight. Mix ingredients... (duck eggs!) In the tin... And cooling now And yes... ingredients are keto(ish. Assuming you don't eat a huge peice, since carrots are kinda high for carbs)
Maple walnut biscotti out of the oven and cooling before slicing and returning to oven for the second baking.
Biscotti ready for nomming... hmmm, may not last till christmas.... Gravy base ready to go in oven.... And as I now have a souse vide... im going to be “pre-cooking” some things with it and then finnish under the grill. Namely Bacon wrapped chipolata sausages. Sage and shallot pork stuffing And chestnut and apricot pork stuffing....
One year my two brothers in law were helping mom make rum balls, which should be about the size of a gum ball. Well to shorten a long story, the more they rolled the more they "tested". By the time they finished the batch, those rum balls were the size of ping pong balls.
Ok, two .it's days till Christmas. Who among us besides me are gonna stay sober til we cook and eat Christmas dinner? Lo!o!oL

Obviously been a lil busy today but managed to grab some photoes. Turkey resting after cooking to perfection...so moist & juicy Green bean casserole with bacon crispy top Yummy gravy using the base I made earlier plus the drippings from the turkey Maple & bacon brussle sprouts with pine nuts Skirlie (Scottish oatmeal stuffing.... no not keto.. but traditional for hubby)
Dinner plate... Turkey, gravy, “candied” sweet potato, bacon maple brussel sprouts, honey cinnamon parsnips & carrots, sage & onion stuffing balls, chestnut and apricot stuffing balls, skirlie, green bean casserole, bacon wrapped chippolotas, rosemay roasted potatoes (also jot keto but its about the pnly time we have potatoes for the whole year)
