Share your best meatloaf recipe

    I was informed last night that my meatloaf is gross. The kids gave it thumbs down and informed me that some other Mom makes it better. I was told mine was bland. So I am asking you all to share your best Meatloaf recipes or your ingredient list. Meatloaf is one of those things that can vary from the meat used to spices, eggs (or no eggs) toppings (ketchup or bbq sauce) etc...

    I used to HATE meatloaf until I decided to make it my self. I prefer ground sirloin for the added flavor, I use bread crumbs for a Italian chicken breading and then add what ever veggies I might wish to have. I brown the loaf in a wok and then roast in the oven broiler until done, and serve with Light House Bleu Cheese dressing and smashed potato's on the side!

    Making meatloaf tonight my self
    Ground beef
    2 eggs
    Steak seasoning
    Crackers rits
    Onion powder
    Garlic powder

    Put bread in toaster
    Crush crackers
    Put meat in a bowl
    Mix in the eggs crackers seasonings and toast after you crumble it up mix it good make your loaf put strips of bacon all around it where you can't see the loaf and put in the oven on 350 cook it until the bacon is done

    50 /50 Ground Beef and Pork
    2 eggs
    Bread crumbs / Crackers in a pinch
    Onion Diced
    Garlic 2 cloves
    Stewed Tomatoes
    Ketchup on top
    Baked in the Oven gotta have the crispy edges

    I will only eat meat loaf if you roll it into small balls and add linguine and a red wine marinara.

    I actually have 2 that I personally use. Like my chili recipe, I seldom use the cookbook to make them any more. I don't always make them exactly the same. Fact is I can not lay my hands on my personal cookbook at the moment and don't feel like searching for it. That said I am going to wing it and give them both to you off the cuff and hope I haven't forgot any details.

    #1 Ted Kilfoile's "Promised land meatloaf" (it has milk and honey in it). This one is specially good for cold sandwiches the next day.
    Sometimes I make it the night before going fishing, just to take a batch of sandwiches along for my friends.
    1.5lb 80% lean ground beef, 1pkg mccormicks meatloaf seasoning, 1/2 cup Onion chopped, 1/2 cup Bell Pepper chopped,
    1 cup Italian seasoned bread crumbs, 1/2 cup honey, 1/2 cup milk.
    mix it all together really well. yup, wash your hands 1st and mix it like your mad at it. form into a loaf. place loaf on a small cookie sheet or a doubled up piece of aluminum foil. on a rack, in a shallow baking pan. excess fat will drain into pan 375F 50-60 min
    #2 Tom's smothered mini meatloaves (or call them Salisbury steaks) in gravy
    1.5lb 80% lean ground beef, I box chicken or herb stovetop stuffing, 1 cup finely chopped onion, 1 cup very warm water,
    1 tspn salt or your favorite seasoned salt, 1/2 tspn black pepper, 1/2 tspn powdered garlic.
    First off in a medium to large mixing bowl blend stovetop stuffing and water, mix well to moisten completely. mix meat and onions into previous mixture. yup, use your clean hands. form into 4 or 6 mini loaves. bake same way as above to drain any excess fat for 375F for 35-40 minutes ---------- okay you are 1/2 way there. Now for the gravy to finish them while they are in the oven.
    Gravy: 2 envelopes (one box) recipe secrets Beefy Onion dry soup mix, one can condensed cream of mushroom soup, 2 soup cans water, and one 8 oz can mushroom stems and pieces drained. Mix all of that together in a big chicken frying skillet or dutch oven. heat and stir over medium heat until thickened, reduce to a very slow simmer. slow lava like bubbles popping thru. Add mini loaves and simmer for 30 minutes turning once at half time.
    Mashed potatoes and a green vegie go real well with this.

    Wow! these are all so different. blue cheese dressing, celery, bacon, stewed tomatoes & honey? I have never associated any of those ingredients with meatloaf before. I have never cooked with pork burger before.

    Keep the recipes coming, this is great.

    If you want a higher protein content, skip the bread/cracker crumbs and try almond flour with an extra egg

    I saw my Mom make this dozens of times. It's my kids favorite.

    One pound ground round
    One egg
    One small can evaporated milk
    One envelope onion soup mix
    Dash of steak sauce
    Mix the above by hand and stiffen with quick cooking oats
    Pack into loaf pan then dump on foil lined baking sheet
    Glaze with mixture of catsup and brown sugar (1/4 cup each)

    Bake @325 to 350 for one hour or more until no pink remains in center

    Can be doubled by increasing baking time by 30 minutes.

    Actually, I have I would just tell them they were in charge of making meatloaf (and that Google is their friend).

    OMG! I never knew this. So, all I have to do is bake it for 1 hour, 30 minutes and the meatloaf turns into TWO meatloaves?

    Roasted Vegetable Meatloaf With Balsamic Glaze
    Ingredients olive oil

    • 1 yellow pepper, finely diced
    • salt & freshly ground black pepper
    • 2 large eggs, lightly beaten
    • 1⁄2 lb ground veal or 1⁄2 lb round beef
    • 1 lb ground chuck
    • 1 cup balsamic vinegar
    • 2 tablespoons balsamic vinegar

    Directions See How It's Made
    1. Preheat oven to 425°F.
    2. Heat the oil in a large sauté pan over high heat. Add the zucchini, peppers, onion and salt and pepper, to taste, and cook until almost soft, 5 minutes. Stir in the garlic and 1/4 teaspoon the red pepper flakes and cook for 30 seconds. Set aside to cool.
    3. Whisk together the eggs and herbs in a large bowl. Add the meat, bread crumbs, cheese, 1/2 cup of the ketchup and 2 tablespoons of the balsamic vinegar and the vegetables and mix until just combined. Mold the meatloaf on a baking sheet lined with parchment paper.
    4. Whisk together the remaining ketchup and balsamic vinegar in a small bowl then brush the mixture over the entire loaf.
    5. Bake the meatloaf for approximately 1 to 1 1/4 hours. Remove from the oven and let rest 10 minutes before slicing.
