Simple recipes with pasta needed

When I was a poor college student I used to put soy sauce on my pasta. I am going to try all your suggestions, plus @tacmotusn advise on the picky eaters.

 

I am slowly learning how to cook healthier for folks who are supposed to cut back on starchy foods such as rice, pasta, potatoes, bread, etc. I recently made a dish where I would normally used rotini pasta spirals. Instead I dropped the pasta completely from the recipe and used thin cut 1/4 inch slices of zucchini and layered the whole thing like I was making lasagna. It turned out wonderful. I am going to do another I picked up from watching Rachel Rae on TV where I will cut thick 3/4 to 1 inch steaks of eggplant. Baste them with olive oil and broil on each side until slightly browned. Next you serve them up topped generously with your favorite red pasta sauce with or without meat and plenty of fresh grated Italian cheese.

 

Using a bag of egg noodles, cook with salt and butter add diced left over chicken, bacon bits etc a pint of whipping cream, a cup of parmesan cheese, and a cup of minced parsley mix... enter a chicken alfreado...
