    That old black pot and the depression days
    went together like the oceans and the waves.
    You didn't go to the store back then,
    and to waste a soup bone was a sin.
    You grew what you ate and cooked what you got,
    and it all came out of that old black pot.

    There was cabbage, collards and turnip greens,
    Okra, squash and string beans,
    Black-eyed peas, onions and tomatoes,
    Fat back, gravy and mashed potatoes.

    The men rolled logs and plowed the fields
    and prayed for rain that the crops might yield.
    They picked the cotton and pulled the corn,
    Built a shed for a calf newly born.
    Oh, but the strength these men have got,
    and it all came out of that old black pot.
    .
    Rice Pudding
    .
    4 eggs, 2 cups milk, 1/2 cup sugar, 1 TBS butter melted, 1 tspn vanilla, 1/4 tspn salt
    Beat eggs, add milk, sugar, butter, vanilla, and salt.
    .
    2 cups cooked rice, 1/2 cup raisins.
    Stir rice and raisins into the mixture above, pour into buttered baking dish.
    .
    1 tspn cinnamon, 1/4 tspn nutmeg.
    sprinkle cinnamon and nutmeg over top of mixture in baking dish.

    Bake at 325F uncovered for 35 minutes. serve warm.

    Catfish Etouffee

    2 cups onions finely chopped, 1/4 cup celery finely chopped, 1/4 cup bell pepper finely chopped
    3/4 cup butter, 1 tspn black pepper, 1 tspn red pepper, 1 tspn salt

    Saute all above until onions, celery, bell pepper wilted (well softened)

    3 pounds boneless catfish fillets cut into 2 inch squares, season with salt and pepper

    Place seasoned catfish squares into pot evenly. turn gently to avoid breaking fish pieces.
    Do not stir. Move pan or pot back and forth several times to agitate mixture, turn heat low
    and simmer - 20-25 minutes serves 4-5 serve over hot cooked rice.

    @tacmotusn Thanks! I put this in my cart and mean to get it for the wife as she is always interested in cooking as it is a huge interest for her...eating her cooking is my interest. :) The Catfish Etouffee sold me as mouth started to water like I heard the dinner bell. Thanks!

    Thank You tacmotusn. I was wondering how the recipes diverge from those of Justin Wilson or "The Tabasco Brand Cookbook"? I've done allot of cast iron cooking, so are most of the recipes one pot? Thanks in advance for any light that you can shed.
