Rice Pudding . 4 eggs, 2 cups milk, 1/2 cup sugar, 1 TBS butter melted, 1 tspn vanilla, 1/4 tspn salt Beat eggs, add milk, sugar, butter, vanilla, and salt. . 2 cups cooked rice, 1/2 cup raisins. Stir rice and raisins into the mixture above, pour into buttered baking dish. . 1 tspn cinnamon, 1/4 tspn nutmeg. sprinkle cinnamon and nutmeg over top of mixture in baking dish. Bake at 325F uncovered for 35 minutes. serve warm. --------------------------------------------------------------------------------------- Catfish Etouffee 2 cups onions finely chopped, 1/4 cup celery finely chopped, 1/4 cup bell pepper finely chopped 3/4 cup butter, 1 tspn black pepper, 1 tspn red pepper, 1 tspn salt Saute all above until onions, celery, bell pepper wilted (well softened) 3 pounds boneless catfish fillets cut into 2 inch squares, season with salt and pepper Place seasoned catfish squares into pot evenly. turn gently to avoid breaking fish pieces. Do not stir. Thank You tacmotusn. I was wondering how the recipes diverge from those of Justin Wilson or "The Tabasco Brand Cookbook"? I've done allot of cast iron cooking, so are most of the recipes one pot? Thanks in advance for any light that you can shed.
