Stages of salmon

For lomi lomi salmon, I salt cure too. Usually, salted salmon is used. But I find salt cured is good too. Not as salty. And you can always season it.

Monkey loves lomi lomi sea asparagus too.

 

That salmon is not raw, it's cured, looks good though

 

Many years ago one could buy salted Mullet that was shipped in brine. Is it still sold that way?

 

Not sure about mullet. Other salted fish can be found though.
