Recipe Steelhead Ceviche

    Freeze fillets for 2weeks to aid in killing microbes for Fresh water fish. Salt water fish shouldn’t need this step
    Cut fish into small pieces add to glass bowland lots of fresh lime juice. Let stand until the fish changes color and flakes when pulled apart,do this in the fridge (usually about an hour or two).

    While the fish is cold cooking chop the following ingredients:
    Roma tomatoes, red onion, cilantro, jalapeno peppers, oregano, salt pepper, Tabasco, add to fish ( drain fish from juice) after the fish has finished cooking.

    Put on a Tostado with avocado wedges on top of lettuce and enjoy. You can use lemon juice instead of lime if you choose to.
    If you don’t like spicy take out the Tabasco and jalapenos and add garlic.

    This recipe is to taste no set measurements other than lots of fresh lime juice.
