    I grew up 'poor' but that was how other folks looked at it. Large family (9 of us) + 1 breadwinner = poor folks food....

    Beans (with ham knuckle) and cornbread. To make it a treat, add maple syrup on the cornbread before the beans.

    "Rice casserole" rice and a can of cheese soup, baked, then served. This to provide some variety from Mac & Cheese.

    When dad got a bonus, we had Spare ribs w/sauerkraut and potatoes.

    Lunch (carried in a paper sack to be reused many, many times) - PB&J on day old bread and a bag of corn chips. In season - add an orange. Once in a while, we got a quarter to buy a pint of milk.

    Never felt neglected nor went to bed hungry (well, not often) Looking back, don';t think I would change a thing.

    We came to Canada as DP's (as we were called , dad & mum had a very British accent ),and with that dad couldn't get a job in his trade, so we made it and never went hungry. things were tight , others had stuff we saw in stores , but we had things that would poke your eye out etc. Schooling for myself was Boys school / Military till Canada and then Canadian Military.. I think i ate better at home ;) ..
    Good upbringing , not a complaint ..

    I'm going to post my family recipe for cornbread. I call it "7 Continent Cornbread " because this recipe has been requested and prepared on all 7 continents.
    First, preheat your oven to 400 degrees F.
    Second, grease and sugar coat the bottom and sides of your pan.
    Ingredients list :
    1 cup cornmeal (coarse or medium grind is best)
    1/3 cup flour
    1 tsp baking powder
    1/2 tsp salt
    1/4 tsp baking soda
    1/4 cup sugar
    1 beaten egg
    1 cup buttermilk ( if you don't have buttermilk, put a tsp of vinegar or lemon juice in the bottom of your measuring cup, then add milk to bring it up to the 1 cup mark, and mix it a little)
    Mix the dry ingredients together, then add the wet ingredients.
    Mix the batter until the dry ingredients are just moistened, batter will be lumpy, don't overmix.
    Bake at 400 degrees for 20 minutes.
    This is for an 8" cake pan, double the ingredients for a 9"x13" pan.
