Ingredients: 4 oz ground pork sausage 1/2 large onion 2 stalks celery 4 med. to large mushrooms 1 Tbsp olive oil or bacon grease 2 cups beef stock 1 large clove garlic 1/4 tsp black pepper, or to taste Sea salt, to taste Instructions: Keeping separate, chop the celery, onions and mushrooms med. fine. Chop the garlic very fine. Saute the sausage, garlic, pepper, salt, and onions in the oil over med. heat. Stir well to prevent sticking and to break up the sausage. When the onions are about half done, add the celery and saute until the onions are done. Add the beef broth and increase to high heat. Bring the soup to a quick boil, then remove from heat. Serve hot. Makes two generous servings. This dish is incredibly flavorful and has a delightful "tooth". (Will post pic after the next batch.) Image:
