Recipe Yellow squash

    ditch witch I do stupid crap, so you don't have to

    sliced yellow squash, cut in half if it's huge
    sliced n diced yellow onion
    butter, brown sugar, salt and pepper

    brown the butter, dissolve the sugar in it, add salt and pepper to taste. I like it sweet so mine is like syrup. toss in onions, when soft add the squash, cover and simmer for 20 minutes. It's gonna be mush but it'll be good.

    I'm canning it now. Changes are, pack quart jars with the onion and squash, pack it really tight. Make the syrup, when it's bubbling pour over squash and leave half inch headspace. pressure can 10 pounds 30 minutes

    Sounds delicious. I grill mine, cut lengthwise, brush with olive oil, sprinkle on your favorite seasonings.

    Like mine sliced, rolled in seasoned cornmeal, and fried to a light brown in Olive Oil. That, some fried chicken, and a sweet potato/or mashed potatoes with biscuits/sweet iced tea and you are ready to chow down.

    Even though I know better, I always plant too much yellow squash. If we ate it every day at every meal, the two of us could not eat it all before it went bad. I slice and batter up a lot of it to freeze, but finally decide to try canning some just to get it off the kitchen counter. The Mr likes to slice it up and throw it in a big skillet with sliced potatoes, onions, sweet peppers, and smoked sausage.
  5. We had the same problem. We ended up putting them in ziplocks and freezing them. Just as yummy as the day we picked them!

    As far as recipes go, we put sausage or bacon cut up small in a pot with onions, with a little water. Get most of the sausage cooked and onions brown then we throw the squash in!

    mmm, I didn't plant any yellow squash this year, it's not too late for me though :cool:.

    I like to slice it thick, spray with non-stick cooking spray, season lightly and then put it on the grill. Making veggie-kabobs with onion, zuchinni, squash, tomato, etc. yummy.

    Never tried to can it though, we wouldn't get enough in at one time to can, just enough to eat.

    I planted four hills, three seeds to a hill. WTH was I thinking??? Of course they all came up gangbusters.
