Cheap, fast, and easy breakfasts...

    Ok, we get up,and we want to eat, or the kids do...at any rate, something easy and fast is on the menu...
    Think simple and easy dishes of 1 pot/pan types...Like rice, oatmeal, and now I'm going into areas I know that most of you know a LOT more about than I ever will..Grits, cornmeal mush, malto meal? Oh boy! I remember so many fast dishes we made as kids, way back ( when dinosaurs roamed the earth they tell me!) Not counting all the cinnamon toast...it's all about a slam dunk, down and dirty, stick with ya all day long, type of breakfasts.
    Some people like rice with butter, some like it with raisins, some prefer it with cinnamon and sugar. I've had it all and even with homemade gravy over it and it was GOOD! Oatmeal, the same thing: with butter, with milk with suagr and with cinnamon. I have had grits with butter and gravy ( don't ask me my grandmother was Irish!) Maybe she was from the "south side"? I have had cornmeal mush with butter, with sugar, and fried in a pan like pancakes, or in the regular cornmeal squares...dipped in a glass of cold milk or even better buttermilk...(Good God, I am old!) But you get the idea. A fast and easy, 1 shot cooking deal that everyone can eat.
    Not to mention all the newest quickie breakfast drinks and mixes out there today...You have an enormous variety of choices for nearly everyone. If it comes down to a "cold" breakfast, "Tang" or any mix with some powdered/canned milk, and a couple of "pop tarts" will get ya through. Not the best mind you, but hey.... it's all about SURVIVAL...right?

    If I had to eat oatmeal for breakfast I'm not so sure I would want to survive. [stirpot]


    Bust most of that other stuff sounds great! I'm old too. I grew up on cornbread and whole milk . . . like the kind that comes directly out of a cow's many boobies. ;)

    1 pan "Scrambled eggs and hash" cooks in about 20 minutes

    1/2 medium onion, chopped
    2-3 medium potatoes diced into 1/4 inch dice (leave skins on for texture and vitamins)
    1/4 cup diced green or red bell pepper (optional)
    2 tbsp butter
    6 eggs
    1/4 cup milk
    1/2 cup diced ham, chopped precooked bacon or chopped breakfast sausage
    1/2 cup shredded cheddar cheese

    Set a medium no-stick (I use Cast Iron) skillet on medium low heat. Melt butter. Put in onions and potatoes. Cover and cook for 15 minutes, stirring occasionally (about once every 3-5 minutes), or until potatoes are tender. In medium bowl combine eggs and milk, scramble till completely combined. Add in meat, stir to combine.

    Once potatoes are ready, stir eggs and meat again and pour all at once over the potatoes. allow to set until bottom and edges are cooked, then lift an edge and allow the uncooked egg to run underneath the cooked egg. Cook for 4 minutes Do not overcook. Sprinkle with 1/2 cup shredded cheddar cheese, place lid on top and set aside for 1 minute to allow cheese to melt and eggs to finish cooking.

    Please note: this can be prepared from dehydrated onions, peppers, potatoes, powdered eggs, powdered milk, and canned meat (canned ham, bacon or pork are best for this). Just be sure to fully hydrate the dehydrated items prior to cooking and using a powdered cheddar cheese topping as a substitute for the shredded cheddar cheese is also acceptable. This is exceptionally popular on family camping trips. It is a good, hot, hearty breakfast in under 30 minutes.

    Oatmeal is okay with some flavoring. Any kind of fruit or sweetener would do.
    I would intersperse it with rice&eggs, and grits&eggs. Variety is a good thing! Add any kind of meat and you have a fine meal!
    Rice is good with most anything, at any meal. A cheap way to make other stuff go farther. Same with grits.
    Cheese grits with sausage or bacon is a breakfast favorite.
    I do NOT like Cream of Wheat - that is a northern dish, little seen in the deep south.

    I'm not one to consider only eating certain foods at a certain time.

    Food is food. breakfast, second breakfast, dinner or supper. doesn't matter to me.

    All I have to say is 'Get in my belly'

    You mean cold pizza is not on you guy's list?
    Hell,I've probably eaten more cold pizza for breakfast,than all that other stuff combined.

    Momma says, Pizza is a Food Group, all by itself.... I have cold Pizza every Thursday morning, after MailPlane Wednesday Pizza lunch for the Local folks.... .... YMMV....

    I prefer Hormel canned hash with about 4 scrambled eggs with plenty of ketchup and hot sauce. Damn I'm getting hungry just thinking about it.

    Pizza is the ULTIMATE breakfast food! Done that a lot of times. Never been married, so I never outgrew batchelorhood!

    Y'all fix a pot of grits with lots of butter fry a couple of eggs sunny side up... put your eggs in a bowl add lots of cheese and top with the grits... a side of country ham and red eye gravy with biscuits.... can't be beat...;)

    Interesting that you mention grits and CoW.

    Never having had grits - I've never even seen them - I thought that they were similar to CoW, only I thought they were like a corn-based CoW. I must be totally wrong. :(

    I'll have to go follow RH's grits tree threads... I just can't figure out the food you southerners eat yet. Someday, I'll make it there... If only for a crazy southern meal. :)

    Hated Oatmeal

    I lived off of oatmeal when I was a kid since we had a large family (8 hungry mouths). I swore to myself that when I grew up that I would never eat oatmeal again. Now, what is my favorite breakfast...oatmeal. I usually have it with olive oil margarine and salt and pepper. My wife also prepares it with Splenda and soy milk along with raisins and pecans. Either makes my morning a pleasant start. I would never have thought such an effort as a kid. lol

    NO! Grits and the Yankee "Paper Mache" are totally different! We once had some Mess Cranks on the ship try to pawn off that crap as 'grits'..... we southerners darned near keel-hauled them! [stirpot]

    Kinda like Sirloin Steak compared to Salmon Steak....... both are meat, but taste utterly different!

    Buiscuits and gravy with scrambled eggs on top with salsa and a side order of bacon. In the military we called it SOS Ala Goldenrod Western Style with a side order of pigs.

    let it stiffen up in a bread pan
    cut it off in slices and fry it
    the amish up here got me on it
    they call it fried mush

    and cold pizza is the perfect breakfast
    long as ya got beer :)
