Actually, cold collard biscuits are pretty damn good too! They make a great snack to boot!

    microwave omelet in a mug

A large microwave safe mug, spray with cooking spray, crack two eggs directly into mug along with whatever other ingredients you like in your omelet/scramble. Mix lightly, put in microwave and cook on high for 1 minute. Check to see if eggs are fully set, if not, cook another 20 seconds at a time until done to your satisfaction. Run knife around edge to release and plop it out onto a plate or eat it right from the mug.

Total time is around 2-4 minutes including prep and only the mug and a knife to clean up. Mmmmmm!!

Ok, I'll BITE...What are collard biscuits?
I know what collards are, and mustard greens and turnip greens,I love 'em!
Salt and a splash of white vinegar= YUMMMM!
I eat them right out of the garden or out of the can, like spinach!
None of my Kids have yet to acquire that taste!
I was born in California, spent a lot of time up in Colorado, and ONLY a few months in Texas and Florida...so, where on earth did I get those tastes?
Like black eyed peas with fresh warm cornbread and butter!
Must be something in my genetics that came from the south!???

    Loads of protein!
Not sure about contaminating them with dry cereal though....

Especially SOS made with good country sausage and some cheese blended in! Now that is a meal that'll stick to your ribs!

My standard breakfast is a breakfast burrito.

I throw a couple of slices of bacon choped up failrly small in the skillet until it is cooked and then take it out (leaving the grease in the skillet). Next, I throw into grease about 1/2 a small potato chopped into about 1/8" cubes, some chopped onion and anything else I note left over in the refrigerator. Once the potato is soft enough, I throw the bacon back in and follow with a couple of small to medium eggs. When the eggs are cooked, I wrap it in a flour tortila heated over the fire, add salsa and roll the sucker up.

Takes about 10 mins and is delicious.
